Spice up your weekly lasagne with a fresh pasta shape, and cute baking dish! Follow this recipe for a fool proof easy dinner.

It is no secret that I am not a cook! But since launching my new kitchenware range I’ve been encouraged to take to the kitchen and try my hand at some simple recipes! I am usually a Gousto lover and being a mum of two boys I need recipes that are fast and fool proof, but still satisfy that pasta craving. A few simple steps, this quick and tasty treat will hit the spot in no time!
Try this quirky take on the classic Italian lasagne, by using calamari pasta and a fun baking dish, this is a super fun mid-week dinner.

For the ragu...

Heat a large frying pan until hot and add the oil. Cook the mince until browned all over. Remove from the heat and transfer to a plate.
Add the onion, carrot, mushrooms (if using) and garlic to the pan and cook until softened. Return the meat to the pan and stir in the flour. Add the stock and bring to the boil. Add sugar, tomato purée, a teaspoon of marmite (my secret ingredient) and finish with some thyme, then stir well.
Stir in the tinned tomatoes. Bring to the boil again, cover and simmer until the beef is tender (the longer you let it simmer the better)

For the white sauce...

Melt the butter in a saucepan. Add the flour and cook over the heat for one minute. Gradually whisk in the hot milk, whisking until thickened.
Add the Dijon mustard and parmesan cheese and season well with salt and pepper.

For the lasagne...

Preheat the oven to 200C/180C Fan/Gas 6.

Line the bottom of your baking dish with your fave shape of pasta, I've used the 'calamari shape'.
Layer your ragu over the top of the pasta, let it fill the pasta shapes, don't be afraid to put a lot on!!
Next is the layer of white sauce and finish it off with a generous layer of grated cheese... YUMMMM
Cook in the middle of the oven for about 45 minutes – or until golden brown on top, bubbling around the edges and the pasta is soft.
Finish with a garnish of basil for little bit of green ;)
